Nutmeg Pericarp Taffy

Background:
Nutmeg fruit has about 80-85% of pericarp by fresh weight. At the age of 15-20 years, trees of high yielding nutmeg varieties produce about 75-100 kg of fresh pericarp (fruit rind) per tree, besides the economic yield of spice products. This biomass of nutritious pericarp is simply left behind in the garden for rotting after collecting the seeds and mace.

The pericarp, having nutritive value, is processed as Nutmeg Pericarp taffy.
